Thanksgiving

Thank God it is over.

Oh boy, what a day. I started cooking dinner at 7am. I needed to do some last minute preparing, and get the pies in the oven. While they were cooking, I took the turkey out of its brine, cleaned it, seasoned the inside, mixed butter with poultry seasoning, put that under the skin of the turkey, and stuffed it with carrots, celery, and slices of an orange. Not to eat, just for extra juice and flavor. Finally, at 9:30am, it was time to put the turkey in the oven. Foodnetwork.com’s turkey calculator told me it would take over 4 hours to cook at 350 degrees. Boy, was that wrong. 3 hours later, at 12:30, the turkey was done. The meat thermometer read 190 (although I think I put it in wrong) and the pop up timer was up. The skin was brown and crispy, and juices were everywhere. You looked at that turkey and knew it was done. So I panicked. Everything else wasn’t ready, and dinner was supposed to be at 3pm. Luckily mom and Joe (who are also people who have no clue what they are doing) gave me some good advice and told me to drop the temperature to 200 degrees, cover it, and just baste it often. A little over an hour later, after I rushed the rest of the dinner through, I was ready to take out the bird and put in the stuffing, green bean caserole, and rolls. 45 minutes later, Joe was ready to carve the bird, and I gave him a crash course in how I thought it should be carved. He took my ideas, and they worked and he carved it perfectly. He was happy, I was happy, and then we tasted the bird. Juicy, very juicy. Thank God! Yay! I rule! Go Amy! Go Amy! Shake your booty now!

(Yeah, it was that great, how many people can say that started with having no clue on how to handle and cook a turkey, and it come out juicy and perfect.)

The rest of the dinner was also a great success. Homemade mashed potatoes, very good and was complimented by Joe who thinks instant is better than homemade. I finally got him to change his mind. Homemade stuffing, very good and was complimented by my mom who loves stove top. She now prefers my stuffing. Homemade green bean casserole, complimented by Joe’s mother and she even asked for the recipe. Homemade whip cream, complimented by everyone, who felt free to help themselves and drowned pumpkin pies in them. The rest? All good and complimented. After all, who doesn’t like gravy from a jar, cranberry sauce from a can, rolls, and canned sweet potatoes with cinnamon, brown sugar, marshmallows, and real butter.

Oh yeah, thats right, we used real butter with everything. Even to butter the rolls. Nothing beats that. Yummy.
