Planning dinner.

I made a quick and fairly easy chicken soup last night. I had no clue what I was doing really. In fact, all I knew was that I wanted chicken soup and I didn’t have most of the ingrediants and the time for the all day kind. So, I improvised. I just kind of thawed out 3 chicken breasts, put them in a pot with 8 cups water, 8 chicken cubes, and I didn’t bother to measure the spices, just threw in some italian seasoning, parsley, and a pinch or two of granulated onion. Let that boil for 20 minutes, shredded the chicken up, threw in the pasta, let cook for another 9 more minutes. What have you got but soup. It was pretty good actually, despite the fact that it was missing all the veggies.

Just goes to show you, improv is good.

The real question is what am I going to make tonight for dinner? I’ve gottten really bad at deciding that. I really need to get back into the habit of meal planning like I used to do. I just kind of stopped planning when we stopped going shopping. There are always those extra parishable foods that we never had. Like mozzarella cheese. I have many recipes with that cheese, and yet we never have it in the house because it doesn’t stay fresh for long. I wish I knew a way to keep foods like cheese fresh for longer. Then there are celery and carrots. I use them for a few recipes too, but they go bad so quickly, we tend to only buy them before we plan on using them. Then again with lettuce and tomatoes. The list goes on with foods I wish I could keep fresh and always in the house. I think the only real exception we have in the house with parishable foods is salad. Thats because we get it so cheap at Costco, and we try and have salad with most of our meals.
