Planning dinner.
Ah. Dinner did not go well tonight. I decided to try a new recipe which was similar to another recipe I had, coconut shrimp. Only this was with chicken strips. I had major problems with the deep fryer though, and the first batch I burnt. The next I came close to burning but it turned out ok, and finally I got the last batch right. They tasted ok. Not as good as shrimp would have though. I should have just made the shrimp, considering I’ve got a whole bag of shrimp sitting in the freezer. Then I had to make mashed potatoes with no milk since Joe never picked up milk last night. They came out ultra thick. I added cheddar cheese for more flavor and to try and get some dairy in the potatoes. Again, they tasted ok, just not as good as they would have with milk.
I got most of the grocery list done. Everything we need is listed, and I let Joe decide on what desert I should make for sunday dinner, if he wants me to make bread that similar to Outback’s bread, and verified the snacks for the superbowl. He chose a three (or four if I’m so in the mood) layer yellow cake over a peach cobbler, no on the bread, and yes he wants baked lays for the game. Now all thats left is for me to decide if I should make lasagna or chicken and dumplings. I think I’m leaning towards lasagna, despite the fact that making homemade lasagna and a homemade cake is a lot of work. I’m just in the mood for the whole salad, bread, main dish, desert thing. Chicken and dumplings tends to just be a complete one bowl meal, and more of a comfort food than a sunday dinner thing.
Ah, tomorrow we pick up Andy, and the weekend begins. Its going to be a long weekend with 2 kids running around the house and sunday to deal with, since Joe isn’t feeling well, and I’m just drained as it is. Maybe its more of a cabin fever thing though. There are these huge and thick patches of ice right outside our door and down our steps. Its so bad, I slipped twice when taking out the trash yesterday and I was being super careful. I did get the mail yesterday since I went out, but not today or the previous days. I also didn’t go out today because the ice was melting a little from the top of our house, and was crashing down on the sidewalk and deck. I didn’t want to risk getting hit.
I’m glad I got the mail yesterday though. I actually got a child support check. Yay, go extra $50 that I already spent on diapers! Its my 4th child support check ever. How can I not be thrilled that the system is finally pulling some out of his paychecks?
Well, its 10:30 at night. Time for me to make sure Alex is sleeping ok, and go to bed. Yay, go sleep.
