Chocolate Oreo Pie

The other day Alex, the boy who gets into everything, decided to make “chocolate milk” with a package of pudding and water. Unfortunately I was going to make a triple layer chocolate pie, but now I couldn’t as I needed 2 packages of pudding and only had 1 left. So I just tossed everything left up on the shelf in the kitchen cabinet. Today as I was opening the cabinet to grab a snack the oreo crust and the package of pudding came tumbling down and hit me on my head and onto the floor. As I picked it up I saw that the label for the crust read something about using the oreo cookies and cream pudding to make a pie. All of a sudden an idea popped into my head and I got to work using some of the ingredients I had left for the pie and some things I just had around the house. I’ve decided to call my idea the Chocolate Oreo Pie.

Ingredients
1 oreo pie crust
1 package sugar free chocolate pudding
1 cup milk
1 tub of sugar free cool whip
1 package 100 calorie oreo thin crisps, lightly crushed
1 tablespoon semisweet chocolate chips

Directions
Whisk pudding and milk together for 2 mins till thick. Add half the container of cool whip and whisk until blended. Pour into oreo crust and spread making an even layer. Pour lightly crushed oreo thin crisps into remaining cool whip and stir till combined. Pour over too chocolate layer and spread making an even layer. Sprinkle chocolate chips over top pie. Refrigerate for 3 to 4 hours until set, cut into 8 slices and serve.

The best part about this pie? It is a lot less carbs than the original pie I was going to make, and having gestational diabetes I kind of need to worry about that. I calculated each slice to be about 31 carbs. I’m really looking forward to having it after dinner tonight. I let Alex lick the spoon and he says it is “mmmmm.”

    A boy that age that tries to make his own chocolate milk using pudding?

    That’s pretty clever.

    He reflects well on your creativity. Next time, hand him 5 ingredients he can’t go wrong with and see what else he might come up with…

    I think you were supposed to catch on a bit earlier, but when you refused to do so, the ingredients took matters into their own hands and whacked you upside the head…

    I’d keep the cans stored a bit lower from now on!
